ratatouille

what better for a bunch of fresh veggies?


this is actually ratatouille's ratatouille, as originally envisioned by smitten kitchen. here is my slightly modified version:
you need:
3 green onions, diced
1 garlic clove, diced
1 cup of your favorite tomato sauce (i used arrabiata)
some olive oil
1 small eggplant (optional), thinly sliced in rounds
1 medium zucchini, thinly sliced in rounds
1 medium yellow squash, thinly sliced in rounds
1 sweet red bell pepper, thinly sliced
spices: salt and pepper, oregano, basil
+ few tablespoons soft goat cheese, for serving

what to do:
0. Preheat oven to 375
1. spoon out the sauce evenly in the bottom of a large casserole dish, stir in onions and garlic.
2. lay out eggplant, zucchini, squash, and red pepper overlapping and alternating and concentrically around the outside of the dish working your way in. use any of your favorite veggies, sliced thin!
3. drizzle some olive oil over the top, then spice to your taste.
4. if you have parchment paper, cut a piece into the shape and place on top of the veggie arrangement (keeps from burning).
5. bake 45 min.
6. while it's baking, make some cous cous, rice, polenta, crusty bread, or your other favorite grain.
7. serve on top of grain with a dollop of the goat cheese (sour cream would also be good)
8. anyone can cook!!!
